| Description: |
Directs other cooks and produces assigned menu items according to standardized recipes. Adhering to all policies and practices regarding safety and sanitation; providing top notch customer service; taking and implementing direction from executive chef, and all members of management.
Also Perform other duties as related to dining services as assigned or requested by a manager.
•Consult with Chef and Production manager as to amounts of food needed to be produced
•Assists Chef on instruction to cooks on procedures
•Trains cooks to ensure proper temperatures are used.
•Make sure line is set up on time for lunch and dinner
•Make sure foods are batch cooked to ensure quality and taste
•Make sure kitchen is clean and sanitized
•After the meal period ensure all leftovers are labeled and dated
•Takes lead role for station set up, execution of recipe, and assumes responsibility for menu items
•Makes sure all ingredients and food items are prepared according to recipes
•Demonstrates the ability to produce a complete meal utilizing menus, production sheets, recipes, and other written guidelines on a timely basis
•Makes sure that your station is properly merchandised utilizing items that are contained in the recipe only
•Diligently maintains the cleanliness and overall all appearance of the station, including the sneeze guards and the floor area in front of the station
•Ensures that hot food is being served at proper temperature, and that cold food is being served to proper chilled temperature, and then records both an opening, holding, and closing temperature in the stations temperature log
•Utilizes unused portions and exercises portion control for all food items, on an as needed basis
•Has all foods ready on time
•Has all food properly labeled and dated
•Follows all safety guidelines, including wearing non skid shoes, tuff knit gloves, and the proper usage and changing of disposable kitchen gloves
•Makes sure all proper sanitation methods are followed
•Wears proper uniform at all times, including hat, apron, and name tag, cut glove, and slip resistant shoes
•Makes sure all kitchen equipment is in proper repair. If not, notify management
•Fills out production records and returns to Production Manager, AFSD's, or Executive Chef after service
•Assists other cooks, to be sure that stations are opened and merchandised properly and in a timely manner.
•May be assigned other tasks as needed
•Responsible to complete any extra task when asked by a manager
•Ensures station is properly cleaned and or broken down per station checklists before leaving for the day
•Communicates to a member of management before taking breaks, or leaving for the day
•Takes direction from Executive Chef, and all members of management
